About the Author
Alex Stupak earned recognition as one of the world's most innovative pastry chefs while leading teams at progressive cuisine icons Clio, Alinea, and wd-50. But innovation only counts, he figured, if you push yourself out of your comfort zone, and so he left that world to cook Mexican food, a cuisine that captured his head and his heart. His restaurant Empellón Cocina earned him a James Beard nomination for Best New Restaurant in the country, and Food & Wine magazine named him a Best New Chef in 2013. 

Jordana Rothman is a veteran of Time Out New York, where she held the reins as the magazine's Food & Drink editor for six years. Unconventional and creative tacos for foodies

This taco cookbook is a unapologetic and bold collection of inspirational recipes for making unique taco dishes.

There are some really interesting recipes in this book. This book is also not for the "casual" or traditional taco maker as the recipes are likely not what you are expecting.

The tone of the recipes is set in the first half of the book which gives a brief background on Alex Stupak and his culinary journey, some fundamentals on spices and chilies, and then a pretty lengthy explanation on the type of corn that best lends itself to tortillas, tortilla recipes, and salsa recipes. Thoughtfully, the tortilla recipes give you the ingredient option of easier to find masa harina (as well as the harder to find fresh masa). In addition to corn and flour tortillas recipes, there are some creative fusion recipes such as pistachio, saffron, and rye tortillas. The subsequent dedication to salsa recipes emphasizes the wide variety of ways a salsa can create a completely different taste and look to a taco.

The second half of the book is dedicated to taco recipes. While the opening notes suggest that some of the recipes are classics, I tend to disagree. That being said, the recipes are pretty cool. Some examples of recipes include Chicken Tacos with Kale and Salsa Verde, Skirt Steak Tacos, Fried Oyster Tacos, Pineapple Tacos, and Wild Spinach Tacos.There are also a few taco recipes that would lend themselves to breakfast as well as a couple of dessert taco recipes.

The closing section has recipes for components (such as Adobo paste) that are used in some of the recipes.

The writing tone of this book is very down to earth and lightly humorous. There are really nice photos throughout the book mostly showing plating of the final dishes but some showing steps along the way.

Pretty much all of the recipes require advance planning and preparation. They do not lend themselves to throwing together on the spur of the moment.

I recommend this cookbook to fans of Alex Stupak and foodies who enjoy innovative spins on traditional recipes.

The Taco As A Trojan Horse

This is a book by a white guy with fancy chef credentials from multiple Michelin-starred restaurants, who then went on to open fancy taco restaurants in Manhattan. And a white girl food writer from Brooklyn. With photos by a Manhattan photographer. New York City is not known for tacos. If that matters to you, then this book is not for you.

This isn't a book about "authentic" Mexican tacos. Instead, it's a book that holds up the humble tortilla in the true light it deserves. Stupak understands that the most critical part of a taco is the quality of the tortilla. You will never have a superb taco with packaged tortillas. It needs to be made with fresh masa, shaped by hand and cooked seconds before it's inhaled. Pages are devoted to the process of nixtamalization of corn and to ways of grinding it to masa. Alas, Stupak says that one can only make proper masa for tortillas using an industrial machine, so it is inaccessible to most folks. Maybe you live in a city that has a tortilleria that sells fresh masa. Or perhaps us home cooks can get lucky with a metate, or a wet grinder as is used in Indian homes to grind rice and lentils into batter for dosas. If not, there's always masa harina, the dried masa flour that requires us to just add water. While far from fresh masa, masa harina still produces superior tortillas than most U.S. taquerias serve up. To all the wheat flour tortilla lovers, don't worry, also included is a recipe for making those, with lard. And to those who love non-traditional ingredients, we also get tortillas using rye, buckwheat, yuca, beet, pistachios and even chorizo (yes, in the dough).

Next up are salsas, the "coup de grâce" of taco making, according to the authors. Two dozen recipes lead us from traditional salsas (de arbol, roja, verde) to moles (Poblano, verde) to a North African-inspired version with argan oil and dried apricot. No matter their origin, they laboriously start from scratch and end in supreme deliciousness.

All the labors of love come together in a taco, once the fillings are considered. And these are world apart from your $2 street tacos. The authors give due respect to the traditionalists by discussing the ways of al pastor and how to approximate it at home without a vertical spit. We also get tacos with potato and chorizo, conchinita pibil (the easy way, and also the digging a friggin' pit way), huitlacoche, carnitas and barbacoa. But those are not where the creativity flourishes. Instead, that Michelin-starred experience really expresses itself as sea urchin with guacamole, bay scallop ceviche with cocoa vinaigrette, grilled arctic char with cape gooseberry, lamb tartare, and even pastrami (to put on that rye tortilla). These tacos would feel at home in a Tulum retreat as well as they do in downtown Manhattan.

Even if you frown at these fancy fillings, you cannot take away from the backbone of the book, which are the superb sections on tortillas and salsas that will rival the quality of any made by authentic Mexicans. That alone is worth the price of admission, and will give you enough of a footing to create your own fillings, fancy or not.

Heck, for those of you with a sweet tooth, there's even a dessert taco thrown in, with canela, pasilla, extra virgin olive oil, Maldon salt and dark chocolate. Brooklyn's Mast Brothers Chocolate is recommended, of course.

What a great month it's been for lovers of the taco - ...

What a great month it's been for lovers of the taco - first the fun, hip, irreverent love letter to Mexican taco culture that was Tacopedia, and now this intense, punk-rock manifesto of the taco as high cuisine. Tacos: Recipes and Provocations delivers on both halves of its subtitle, in spades. His recipes range from the traditional to the avant-garde, with a strong core of fundamental respect for the cuisine, its techniques, and its multicultural and evolving spirit. His provocations will rattle the cage of many a pretentious foodie who'd prefer to see Mexican cuisine frozen in time and served for under $5.

The first half or so of the book centers on fundamentals: tortillas and salsas. Stupak is uncompromising here: fresh tortillas, or nothing. I tend to agree. He walks the reader through nixtamalizing corn, grinding it for masa, and pressing tortillas, including instructions on storage and on starting with masa preparada. Of note here is the range of flavored and amended tortillas, enriched by obvious (spinach, spices) and nonobvious (chorizo?!) additions, which have a long history in Mexico. He also has a pretty good flour tortilla recipe. The salsas are phenomenal. I made two of the salsas last night, and found them to be mindblowing - well balanced, intense, and unusual. I especially recommend the salsa macha, which reminded me of a cross between a pipian and buffalo wing sauce. My wife, who was born and raised in the DF, is ecstatic.

Recipes range from old favorites (carnitas, al pastor, barbacoa) to high-concept rethinks (pineapple tacos with lardo, pastrami with mustard seed salsa, sea urchin and guacamole.) With the exception of the pastrami one, which is a little precious, I think they all manage to embody a Mexican sensibility, flavor profile, ingredients, and general approach - even if the end result is cheffed-up and unconventional. Having eaten tacos filled with octopus slathered with Thai basil pesto in the DF and a memorable one of raw marlin tartare in Tijuana, I'm perfectly fine with some wild tacos in the mix. Tacos al pastor have their roots in 1950s Puebla and its Lebanese immigrants hawking shawarmah, and fried fish tacos use Japanese tempura batter. There's cosmopolitan, modern, gourmet restaurants all over Mexico serving food that's influenced by that of the Mediterranean, Asia, and even India. If incorporating other cultures' ideas was off-limits in Mexican cuisine, Mexican cuisine would not exist at all. I can't wait to tackle some of the off-the-wall recipes here.

Which brings me to my own provocation. As we've already seen in some of the reviews, many people - often Caucasians, often casual visitors to Mexico - seem to hold strong opinions on Mexican cuisine. They loudly and snarkily deride as "not traditional!" or "completely inauthentic" any food not served on their last vacation to Mexico or served in the grungy taqueria they pride themselves on having "discovered." These folks know just what authentic really is, and they're the arbiters of it. Obviously, I regard this attitude as deeply patronizing - and ironically unaware of the diversity and evolving nature of Mexican food.

The principal key to understanding the cat's behavioral repertoire is recognition of the fact that most of it derives from the cat's ancestral roots as a solitary hunter. The authors discuss behavior in the context of underlying neutral and sensory physiology. They also address developmental aspects of behavior, including socialization and the influence of kitten playfulness on subsequent adult behavior. The book briefly considers select behavioral problems in relation to disease states and to the complex social systems of cats. The latter, while typically appearing in multi-cat households, are often not appreciated by pet owners. This well-written, interesting book provides a great deal of information about the underlying mechanisms of behavior in domestic cats. About the Author
John W. S. Bradshaw is a Visiting Fellow and Director of the Anthrozoology Institute at the University of Bristol, where he was formerly Reader in Companion Animal Behavior and University Research Theme Leader for Animal Welfare & Behavior. His main research interests are in the behavior and welfare of domestic cats and dogs, and their relationships with people; he has published over 100 research papers and book chapters on these topics. Since 2009 he has focused his attention on the dissemination of animal welfare science to pet owners: his book Dog Sense/In Defence of Dogs was a non-fiction bestseller in both the UK and USA in 2011, and has been translated into nine other languages. He was one of the founders of the International Society for Anthrozoology (ISAZ), and has been a member of the Council of the Association for the Study of Animal Behaviour (ASAB) and set up its Accreditation Committee (1999-present).

This is a must read for cat nerds...

I have loved cats since, at age three of four my mother humored me and took in a stray orange cat that I named Meow Meow. I had a recent catless period of several years that ends this Saturday, when i will be adopting a beautiful blue point traditional Siamese kitten. nonetheless, I haven't had a cat for several years, and was feeling a bit out date on my knowledge.

My reaction to that feeling of insufficient knowledge has been to devour a number of books about cats. of all the books, this one stands out well above the rest in terms of the quality, depth and breadth of information. It reads like a good college psychology textbook, except that it is the psychology of cats, not humans.

If you're a cat nerd, work with cats, or are just looking for a book that is packed full of information on cats and don't mind giving your grey matter a bit of a workout, this is, IMO *THE* book to read. Once you finish, you'll be familiar with the latest theories on feline behavior, and the results of numerous cat studies.

Pros:
-lots of wonderful information
-not dumbed down
-includes academic references and charts to help you put the information in perspective.

Cons:
-expensive
-*not* light reading.
-it is printed in a pretty small font

A magical book

This is a wonderful book which takes you into the world of three-dimensional art. The authors, Gary Levine and Gary Priester, are undoubtedly the masters of their genre. The book includes images of animals, plants, architecture, sculptures, cities, and other objects. It contains some of the best stereograms that I have ever seen. There are many reasons why I love 3D art - you have to stop and concentrate in order to enjoy it; the pages become a window into a reality that resembles the world that we actually inhabit. For those that are new to this art form, sometimes it may take some learning to acquire the ability to view stereograms. The book actually contains an explanation of how to view them. I think that the method that works best is simply to relax your eyes and look at the page and imagine you are looking at an object removed further away. After some time, the image will begin to magically change shape and you will be transported into a world of extraordinary hidden images.

The only criticism that I have is for the book to show the stereograms in the same direction, so one does not have to turn the book around to see two different stereograms located on adjacent pages.

I highly recommend this book to all those who love beauty and want a respite from the hurried pace of everyday life.

Some very good stereograms, for more advanced viewers.

This is a great stereogram book, though it is a bit advanced, with some images that are difficult for many people to view. If you enjoy them, you'll agree that they're magical and wonderful. I would love to do an fMRI or PET scan study of people viewing stereograms; I'd bet that a huge part of the brain would light up, by either metabolic or blood flow measures. Most of these images pop out clearly, and are very three dimensional, rather than lesser images which are often 2D images floating in 3D space. My guess is that this would be a good way to promote brain health and ward off cognitive loss, particularly in the aging brain, or in persons with family histories of dementia.

But mostly, they're FUN!

One caveat: beware of buying these as gifts. If the recipient hasn't done them before, and is unable to do them, they will be very unhappy with you. On the other hand, if they can view the 3D images, they'll be delighted.

This book offers a welcoming departure from most autostereogram books. Most images in this book combine great photos of real-world wildlife with hidden 3D shapes in parts of the photos. This is a must-have for any self-respecting stereogram collector, and a good introductory book for newcomers.

Not for the non-Dummy

I bought it because, unlike the instruction manual, it has an index. But the index is not at all detailed and many of the items I wanted to look up weren't there, even though I later found them within the pages of the book. It doesn't even have a diagram of the camera with page references for each button, as does the instruction manual. It might be ok as an introduction for a rank neophyte to photography in general, but it fails as a reference book for someone familiar with the general principles of photography who simply wants a reference guide to this particular rather complicated camera.

About the Author
Professor Jan Flusser, PhD, Dsc, is a director of the Institute of Information Theory and Automation of the ASCR, Prague, Czech Republic, and a full professor of Computer Science at the Czech Technical University, Prague, and at the Charles University , Prague. Jan Flusser’s research areas are moments and moment invariants, image regristration, image fusion, multichannel blind deconvolution  and super-resolution imaging. He has authored and coauthored more than 150 research publications in these areas, including tutorials (ICIP’05, ICIP’07, EUSIPCO’07, CVPR’08, FUSION’08, SPPRA’09, SCIA’09) and invited/keynote talks (ICCS’06, COMPSTAT’06, WIO’06, DICTA’07, CGIM’08) at major international conferences. Tomáš Suk, PhD, is a research fellow of the same Institute. His research interests include invariant features, moment and point-based invariants, color spaces and geometric transformations. This is a good book about moment theory. My research interest is relevant to moment. But I couldn't find any book about moment theory ever before. On one occasion I found this book in amazon and decided to get one. But unfortunately, my first order haven't arrived till now. BROKEN BRAINS

A Twenty-first Century Epidemic

Your brain is broken. You know it. You feel it. You hide it. You fear it. You have been touched by an epidemic. It deprives children of their future, the elderly of their past, and adults of their present.

No one is talking about this invisible epidemic. Yet it's the leading cause of disability, affects 1.1 billion people worldwide -- one in six children, one in two elderly -- and will cripple one in four people during their lifetime.

I am talking about the epidemic of broken brains.

We refer to our "broken brains" by many names -- depression, anxiety, memory loss, brain fog, attention deficit disorder or ADD, autism, and dementia to name a few.

This epidemic of brain breakdown shows up in radically different ways from person to person so that they all seem like separate problems. But the truth is that they are all manifestations of a few common underlying root causes.

I know this as both doctor and patient. My own brain broke one beautiful late August day in 1996. I became disoriented and terrified and descended into a spiral of helplessness and hopelessness.

Let me tell you my story.

My Broken Brain

Learning, thinking, and speaking were always easy for me. My brain never failed me. In college, I learned thousands of Chinese characters. In medical school, the intricate patterns and names of our anatomy -- the bones, muscles, organs, vessels, and nerves -- mapped effortlessly into my mind, and the complex pathways of physiology and biochemistry were clear after one lecture and reading my notes.

I ran four miles every day to medical school. I took detailed notes in my classes, able to simultaneously listen to, remember, and write down nearly every word my professors spoke.

At the end of the day I ran back again to my apartment, did yoga for an hour, ate a freshly prepared whole-foods meal, and studied without distraction or loss of focus for three hours every night. Then I crawled into bed, fell peacefully asleep within five minutes, and slept deeply for seven hours.

The next day I got up and did it all over again.

That rhythmic life broke down, as it does for all physicians in training, when I entered the hospital and started pushing my body and mind beyond their limits with regular thirty-six-hour shifts on top of an occasional sixty-hour shift (Friday morning to Monday evening!).

When I went to practice as a small-town family doctor in Idaho, I worked a shortened schedule of only eighty hours a week, seeing thirty patients a day, delivering babies, and working in the emergency room.

From Idaho, I went to work in China for a year, breathing in the coal-soaked, mercury-laden air, before I landed back in Massachusetts, working a crazy schedule of shifts in an inner-city emergency room.

Then suddenly (or so it appeared at the time), my brain broke -- along the with rest of my body.

Sitting with patients, I often couldn't remember what they had just said, or where I was in eliciting their story. I tried to take careful notes and keep track, but I couldn't focus on conversations, couldn't remember anyone's name. I started taking pictures and writing down personal details about my patients to serve as my peripheral memory so I wouldn't embarrass myself the next time I spoke to them.

During lectures I had to give as part of my job, I would get lost in the middle of a sentence and had to ask the audience what I had just said. When I read a book, I had to go over passages again and again just to glean any meaning. At night, I read my children bedtime stories but had to robotically mouth the words, because I couldn't simultaneously read aloud and understand what I read.

Sleep eluded me. Exhausted and bone weary, I would lie down in bed at night and remain sleepless for hours. After finally drifting off, I would wake the next morning feeling as if I had never slept.

Depression and anxiety, which I had never known before, became constant companions.

At times I felt I couldn't go on any longer. My capacity for pleasure and laughter faded into a distant memory.

The worse my body felt, the worse my brain functioned. If my stomach was bloated and swollen and I had diarrhea, I couldn't think or sleep. If my tongue was inflamed or my eyes swollen and red, I became depressed. If my muscles ached and twitched, I couldn't focus. If I felt bone-weary fatigue, I would forget what I was saying or why I had just walked into a room.

Some doctors said I was depressed and recommended antidepressants. Psychiatrists suggested antianxiety drugs. My family doctor prescribed sleeping medication. A neurologist told me I had ADD and I needed stimulants. Others said I had chronic fatigue and fibromyalgia. All I knew was that my brain was broken, my focus gone, my mood depressed, my memory fleeting, and my body wasn't working.

All at once, I couldn't pay attention, remember, or experience joy and happiness. It was as if I had suddenly "contracted" three terrible diseases -- attention deficit disorder, depression, and dementia. How could my brain have failed me? The part of me that was strongest suddenly became my weakest link. What had happened?

What I experienced was extreme and I hid it from the rest of the world, except for a very few close friends. I faked it and pulled myself through each day.

But after that summer day in August when my brain broke, weary and fighting brain fog, I began searching for answers.

Piece by piece, cell by cell, body system by body system, I discovered the source of my broken brain. By combing through the literature, consulting with dozens of scientists and doctors, and experimenting with my body and mind, I slowly put myself back together.

It wasn't one thing that broke my brain. It was everything piled higher and higher until my brain and body couldn't take anymore. It seemed sudden but was the end of a long series of exposures to toxins, stress, and a strange infection.

The trail led back to mercury poisoning from living in Beijing, China, breathing in raw coal used to heat homes for 10 million people, eating endless childhood tuna-fish sandwiches, and having a mouthful of "silver" or mercury fillings. I was also missing a key gene needed to detoxify all this mercury, which compounded the problem. I found out about this later through careful testing.

Years of sleepless nights delivering babies and working in the emergency room

destroyed my body's rhythms, which I tried to bolster with quadruple espressos, giant-size chocolate chip cookies, and mountains of Chunky Monkey ice cream (I reasoned that was healthy because of the bananas and walnuts!).

Then one late summer day in 1996 I ate or drank something up in a wilderness camp in Maine that infected my gut. That was the straw that broke the camel's back.

What Most Doctors (including ME) Were Never Taught

One of my guiding principles has always been: Never read a book that has the word "ultra" in the title.

However, interesting perspectives on diet & health intrigue me, & when I saw endorsements from such respected doctors as Dean Ornish, Christiane Northrup & Mehmet Oz, I decided to break my rule and plunge into The UltraMind Solution.

I'm glad I did, for this book is an engaging read that's full of cutting edge science & practical advice. Dr. Mark Hyman has been on a mission to do medicine & health differently since conventional medical thinking failed him in his own debilitating illness twelve years ago. He convincingly argues that maintaining the body's health is essential for the brain's well-being, and that many mental & psychological disorders can be rooted in physical, biochemical derangements in the body's health & metabolism.

In part one of the book he details the background: his personal story which led to his changed philosophy & practice of medicine. He is an advocate of what is termed functional medicine, a relatively new discipline which focuses on not the established "label the disease, give it a drug" approach but "find what's functionally wrong behind the patient's symptoms, then correct the body's metabolism back to optimum function."

The second part of the book contain the outline of his "Seven Keys to UltraWellness" (argh! there's that word again!). He covers optimizing nutrition, balancing hormones, reducing inflammation throughout the body, fixing digestive tract problems, enhancing the body's detoxification, boosting energy metabolism, & calming the mind itself. The third part of the book covers a six week plan to initiate many of these changes, while the fourth part goes into specifics for each of his seven key areas.

Ok, so what's the bottom line? There's a lot of intriguing information and sound advice in the 400+ pages, & I saw nothing that I absolutely disagreed with. Like any diet or health book, he has his own viewpoint & focus, & some of his strategies & recommendations will work better for some than others. This book was a major swing factor in my own decision to try a vegan gluten free caffeine free water only lifestyle, which was difficult but very beneficial for me in multiple areas. I can see this book being useful for two groups of people: First, people who are suffering from problems such as anxiety, depression, "brain fog", adhd, migraines or other brain related problems might find something helpful or even life-changing in his plan. Other people, like myself, who are interested in new approaches & optimum health will certainly find new concepts & tools that they can implement in their own healthy lifestyle. Either way, an excellent book to read.

Restore your energy naturally

I was privileged to be one of the participants who was chosen to undergo the Ultramind solution for six weeks prior to publication. Although it has only been 18 days since I started, the change in my energy level and my ability to concentrate is remarkable.
I have been suffering from intense fatigue and trouble concentrating for the last two years, and my physicians have been unable to find a medical diagnosis for my symptoms. Being a 46-year-old graduate student, wife, mother and employee, I have to be able to concentrate for long periods of time, especially in the evenings after work. Before the Ultramind solution, I could not concentrate or stay focused past the early morning. Without knowing exactly when it occurred, I now find that my energy has been restored enough so that I can work twelve hour shifts at the hospital without fatigue and still go home and study, while retaining what I read. As a side effect, I have lost close to ten pounds without ever going hungry.
Although it may sound totally impossible to remove all processed foods, sugar, dairy, trans fat, wheat and flour products as Dr. Hyman required from my diet, I have discovered that all of my prior sugar cravings have disappeared completely, even now during the hoiday season when cookies and candy abound. I snack on nuts and fruit and make sure I eat good proteins and plenty of fresh vegetables and I drink plenty of water.
In the beginning I thought I would never be able to make it six weeks, but three weeks have breezed by. I am definitely going to make the Ultramind Solution a way of life from now on. Dr. Hyman's principles are simple yet effective.

How I got my focus back

A little over a year ago I had my second child. I worked hard at eating healthy while I was at home for the first three months, and I was quite successful, but when I returned to work full time I felt to busy to continue my healthy lifestyle. For lunch I would eat packaged, frozen entrees or even worse go to our hospital cafeteria and have grilled cheese sandwich with french fries and a soda, this was happening three to four times a week. On my way home, I would stop by the store and pick up dinner that was already prepared or food that was pre-packaged so all I had to do was heat it up. This was no way to teach my kids healthy eating. I have a petite frame and was not overweight by any means but I could tell I was slowly getting thicker around the middle, in addition, I constantly felt tired, unfocused, and distracted. Every time I ate I felt sick, almost like a feeling of being hung-over but without drinking. I decided it was time to change how I, and my family, ate. I have heard of the healing power of food and I decided it was time to try the benefits of whole, unprocessed foods.

Upon starting this program, I decided I had to commit myself wholly. I began by doing all my grocery shopping in Sundays as well as cutting up all my fruits and vegetable so they were easily accessible. I also planned out my breakfast, lunch, and dinner menus in writing for the entire week and stuck to them. I will admit the first week was hard; giving up sugar and my biggest food obsession - soda. After the first week it became easier and easier. As the program continued, my mind felt clearer; I felt sharper at work. The fog that inhabited my brain was lifting and I started to realize that I had been going through daily motions without motivation or care for what I was doing; now I take on challenges because I enjoy thinking through the problems. I also began to feel more energized, more so than I had in a long time, I could finally make it through the entire day without complaining I was tired; I wake up at 4:30 in the morning to exercise before getting ready for work and I don't get to bed until my kids are finally asleep around 9:30 pm. I have the liveliness now to work, be a wife, and play with my kids every day.

There were definitely added benefits to following Dr. Hyman's six-week program. By eating food that was promoted in book and avoiding the foods that contribute to brain fog, inflammation, and, for me, the overall feeling of frustration, I lost body fat, my clothes fit much better, and I am down to my goal weight/size that I have been trying to achieve for years. When you eat whole, unprocessed foods, your weight is naturally controlled; no need to count calories. Additionally, within the first few weeks my skin looked brighter, I now feel comfortable leaving the house without make-up and my skin is much healthier. I feel Dr. Hyman's programs and books are well worth the time and commitment, I would recommend it to anyone who is trying to bring focus and clarity back into their life. You feel so good about yourself that I think it will be difficult to go back to old eating habits. I look forward to my future of a healthy body and brain, both inside and out.
